Fun fall recipe Marshmallow Popcorn

Thanks to one of our clients Jillian for sharing this recipe with us. You can also add fall colored M&M's or pretzels to the recipe to make it more festive.




Marshmallow Popcorn
2 sticks of butter
1 cup sugar
1/2 cup corn syrup
4 cups Marshmallows
1/2 tsp vanilla
2 microwave bags of popcorn popped

Combine butter, sugar, and corn syrup in a sauce pan- boil 3 minutes and remove from heat, stir in marshmallows and vanilla.  Pour mixture over popped popcorn in large bowl and stir until covered.

I made the marshmellow popcorn tonight and it was really yummy. I thought I would make it festive and added M&M's and candy corn. The candy corn held up but the M&M's did not. I wouldn't add M&M's to it. They melted and broke up. Nuts, pretzels or even the candy corn worked. But I think I would love it just plain too. Just wanted to share it with you if you decide to make it.

We tried it and it was super yummy. One thing though, there were some kernels of popcorn that didn't pop and I should have separated them out before mixing it up because I hurt my teeth on some. We used pretzel m&m's and they worked great and were delicious!
